a delicate predator

John Dory is a fish that is caught as a byproduct of fishing for other species which makes it unusual to find at the fish market. They are an unusual looking fish found throughout most of the worlds oceans with large spines and a spot in the middle to confuse other predators. John Dory are solitary predators and are not usually caught in large numbers but they are well worth the price if you have a chance to try them.


I love to get John Dory at the Chophouse when it is available. It is a light fish that it great seared or sauteed and can pair nicely with many different cooking styles. We will be preparing this fish by lightly flouring it and sauteing in olive oil to give a slight crust to the exterior while sealing in the moisture of the filets. We are finishing the dish with a lemon caper pan sauce and serving it with a choice of one of our house-made sides. A very special dish just in time for the holiday season.
